For anyone with turkey leftover, this Turkey Casserole with Rice looks delicious. I think that’s what we’re having today. We have everything except cilantro and since Vince doesn’t like that, it’s a good thing we don’t have it.
We cooked two turkeys on Friday for our “Day After Thanksgiving Feast”. One was fried in the fryer without oil (it uses propane and was so good) and I had cooked one with the sous vide because Addie loves it cooked that way. I thought they would take home leftovers but they said their fridge was stuffed from having had two celebrations with Nicole’s family. So, we ended up with lots of turkey. We’ve now had it Friday, Saturday and Sunday so it’s probably time for me to get a bit creative with the leftovers.

My mother used to make homemade turkey jerky (in her dehydrator) with leftover turkey. It was very good as a snack. Our cat thought the turkey jerky was for her…she would steal it out of your hand as you were lifting it to your mouth. She absolutely loved the stuff!

Your recipe sounds yummy. We finished up the leftovers last night that we brought home from our daughter’s house. Now I’m wishing I still had some to try out the recipe. LOL

Even with leaving half of the white meat with my daughter, I still brought home a lot of turkey! I have yet to make soup, simply because I haven’t had time. It will have to be done tomorrow. My standard meal the day after Thanksgiving is turkey devonshire… turkey slice on toast, with bacon, a cheesy gravy and baked only 7-10 minutes. Delicious!!! We’re having leftovers of that for our evening meal tonight, then tomorrow will have to be soup. Good thing we love turkey!! 🙂
