We’ve had sweet potatoes spread out on mats on the dining room table. They’ve been there long enough and we will need the big table for Thanksgiving dinner so this morning I started canning sweet potatoes.

The Golden Harvest jars are bigger than the Ball jars. I can only get 5 Golden Harvest quarts in the bottom of the big canner. I’m almost sure I can get 7 Ball jars in there. I can get 5 Golden Harvest quarts and one Ball quart but not 6 and surely not 7 Golden Harvest jars in the bottom. I can get 7 on the top layer so that’s how I got 13 in there – 6 on the bottom and 7 on top.

I took all the peelings out to the garden, pulled back the straw and leaves, buried the peelings and covered them back up again . . hopefully doing those kinds of things will help not need so much fertilizer next spring and summer.
I had a bit of syrup left in the pot after using all I needed for the canned potatoes so I peeled a few more, cooked those and we’ll have them one day this week as a side.

Then it was on to soaking peanuts to be boiled and canned. I have 25 pounds of peanuts to boil and can but I’m doing it in 3 or 4 batches.

Vince had cooked cube steaks while I was gone and there were three small ones left so I stuck those in the pressure cooker with a bit of beef broth, cooked them to make them tender, made a roux, added onions and garlic and we’ll have cube steak, potatoes and gravy for our meal today.

Tomorrow I’m smoking baby back ribs so I seasoned those and they’re ready to go onto the smoker.

Hoping to find a little time to sit and stitch after the peanuts are in the canner.

oh how I love boiled peanuts! Haven’t had any in a long time because no one else eats them around here.
