Cajun Garlic Butter Shrimp With Creamy Pasta

Vince was in Aldi Monday and they had several one pound packages of shrimp with a use or freeze by date for a couple of days out . . today, marked down to half price. He bought them and I stuck all of them in the freezer except one that I put in the fridge and wanted to use yesterday. Don’t like pushing the limit on seafood use by dates.

I wasn’t sure what to make so I went to my new favorite recipe site, Half Baked Harvest, and found a recipe for Cajun Garlic Butter Shrimp with Creamy Pesto Pasta. That’s a very long name for a very easy dish.

I cheated and used pesto from a jar. I did add toasted pine nuts on top after adding the parmesan cheese.

It was delicious and so easy to make.

Changes I Made:

The recipe called for 1-1/2 pounds of shrimp. My package was one pound and that’s more than enough for the two of us. I used between 1/4 and 1/3 pound of pasta and that was more than enough. We normally eat one meal a day but our lunch was a little larger than normal but since I wanted to cook the shrimp, we had dinner too. Most days we have breakfast between 9 a.m. and 10 a.m. Lately it’s been cereal or oatmeal in the Instant Pot, with fruit and bacon or sausage. Lunch is served at 2 – 3 p.m. and that’s our main meal. Vince will sometimes eat a sandwich or salad about 5:30 or 6 p.m. I don’t usually eat after lunch but yesterday we split a cinnamon roll for breakfast before heading out to lunch, grabbed chicken strips and fries from Cane’s on our way home from the doctor, Aldi and the pallet store. That was just a little after 11 and then about 4:30 p.m., we had the shrimp so we didn’t add salad or anything else . . just what you see.

Another dish I recommend!
