I am a self-taught cook and the way I do things is not necessarily the way others do them but . . as Vince says . . it eats! As long as he’s happy with what I cook and I’m not hungry, all is good. I’m not going to say he’s happy with everything but he never complains about our meals.
I had been wanting beef stew but I didn’t want to make a huge pot of it so I took a fairly large sirloin steak out of the freezer, cut it up, browned it and pressure cooked it for half an hour or so. It still ended up being a pot almost full but it will be enough for at least three meals.
Then, I made a roux, sauteed onion and garlic, added beef broth and let that simmer for a while. I cut up a couple of potatoes into really small chunks and slice a few carrots into thin slices, simmer all that, then use the immersion blender to grind the potatoes and carrots and that thickens the soup without adding flour or cornstarch.
Then I add potato chunks, carrots that are cut into longer strips (not skinny slices) and whatever else I see that might be good in a stew. Today it was half of a cabbage that I had left from cooking something else and a can of lima beans. For seasonings I add Cajun Redhead, thyme, oregano, garlic, onion and garlic powder, a bay leaf, salt and pepper.
Dinner is ready! Add a salad and some crackers . . yum!

That sounds good. I’d have to leave out most of the spices and all the vegetables except potatoes and carrots, but it still sounds good. Thank goodness I can still eat potatoes and carrots, if they’re peeled!

We just had beef stew–Mike loves it and so do I. I use a pressure cooker recipe I found at some point in time. We don’t like a lot of different spices in our stew–just salt and pepper.
