Yesterday I was thinking I might be horribly bored today without being able to stitch but I have stayed extremely busy.
Vince had some things to do in town this morning so once he left, I got started on getting chickens cooked.
Walmart usually has a two pack of chickens that are a few cents less per pound than buying them individually.
I put them both on to brine in a bucket of salt water, and iced them down so they could sit in the brine for a couple of hours.
I smoked one of them.
This poor chicken isn’t going to win a beauty contest but it was delicious.
When I make gumbo, I prefer to use half smoked chicken and half boiled chicken so I boiled the other chicken with celery, carrots, onions to make some good broth.
Then I put one container of half smoked/half boiled chicken, one container of all smoked chicken (for chicken salad) and two containers of plain chicken and that’s for making soups. We may have chicken salad tomorrow. I’ll probably make the gumbo Thursday. I also got 1/2 gallon of broth from the chicken I boiled after adding about 1 cup of broth to the two containers of plain boiled chicken. Those two went in the freezer.
For the rest of today’s meal, I made baked beans in the pressure cooker, and had a 1/2 gallon jar of those left over; and I made potato salad, which will be great with the gumbo. Maybe I’ll make the gumbo tomorrow. 🙂

I love potato salad with anything, so I’m sure it’s delish, but just wondering how it started to be a thing with gumbo? BTW, I love gumbo too. Loved my grandma’s but never learned how to make it. I did ask her but she never measured anything.

I don’t know about the potato salad with gumbo. I used to wouldn’t do it because everyone knows . . you have rice or potatoes but not both. But, so many of the cajuns put a scoop of potato salad in the bowl with the gumbo. I do that sometimes and sometimes not but we always have potato salad with our gumbo and, of course, rice too.
