One of my favorite meals . . maybe my very favorite meal for fall and winter is soup and sandwiches. Yesterday after I thought about making tomato soup, I had to stop and do it.
Pioneer Woman’s Tomato Soup is the best I’ve ever made.
The salt rising bread makes the most wonderful toast. It also makes wonderful croutons!
With two loaves of bread, I won’t need to make bread again til probably Monday but there’s also plenty of tomato soup left over for another meal. I think I’ll make tuna salad either tomorrow or Saturday and we’ll have more tomato soup and then I’ll freeze the rest of it. Or, maybe today I’ll keep out enough to eat for one more meal then and freeze what’s left.
Yesterday I picked almost all the poblano peppers left in the garden so today I’m going to make chile relleno casseroles to freeze and that’s what we’ll have for dinner. I’ll make a pot of small red beans to go with it and we’ll have a salad. Since I’m already making the chile relleno casseroles, dinner won’t add any more time to that project.

love her tomato soup but it is not as good as her Sherried Tomato Soup…I don’t add as much as the recipe calls for but yummy!

That was the first recipe of hers that I ever made. I do add sherry to the Food Network recipe. You’re right . . it makes it so good.
