Vince has been really dedicated with keeping the kefir going. He drinks it every day. I drink it several times a week. He will add fruit and also drink it plain. I add a bit of salt and it tastes like a good buttermilk.
One day last week I made kefir pancakes. I used this recipe.
First, don’t panic at the amount of bacon. I was cooking extra to go in a recipe I was making for dinner that day.
The pancakes were different from what I expected. I’ll admit that I’m not a fan of pancakes or waffles for breakfast. I like sweets for dessert . . not for my meals. Since pancakes need maple syrup, that’s more like a dessert for me.
The first bite was really a surprise. I was expecting regular pancakes more like buttermilk pancakes but these had more of a crepe texture. I do think I will try these again, make them a bit thinner with milk and serve them as crepes.
I also think these would be really good to serve like fried chicken and waffles, except use this recipe and make them more like crepes. I’m going to try that! Of course, I will report back.

Hmm, you’ve reminded me of my mother’s swedish pancakes, rolled up with powdered sugar and a squeeze of lemon inside. Maybe we’ll have something made from a batter for dinner…

My grandmother was German and we used lemon and granulated sugar, still my favorite way to eat them!

I will put peanut butter and unsweetened apple sauce on my pancakes instead of syrup so they aren’t as sweet. I do enjoy them better as breakfast though.

Thank you! I could eat that much bacon by myself (and sometimes I do!) but I dislike being told that’s too much bacon. 🙂
