A friend’s dad has fruit trees and we were offered some pears and apples so, of course, we said yes.
Pears are one of my favorite fruits to can. My grandma had pear trees and she made the best canned pears and pear preserves. I’ve never been able to make pear preserves quite like I remember hers being but I’ve found two recipes, similar but a bit different, that have pictures that seem closer to my grandma’s than anything I’ve tried before so I’m going to try those two recipes.
Today I hope to get some of the pears canned and one batch of preserves made. These are Asian Pears so I have to “acidify” them before canning. If you’re canning Asian Pears, please pay attention to the recommended acidifying that can be found here.
The apples were just starting to get ripe so we only got a few of those. I’ll probably freeze dry most of them.
I still have potatoes to be canned so I need to spend less time stitching and more time in the kitchen for the next few days!

Quick Batch of Applesauce
INGREDIENTS
* About 2 pounds of apples, peeled and cored
* 2 long strips lemon peel
* 2 long strips orange peel
* 3-inch piece fresh ginger, cut into coins
* 1 cinnamon stick or 1/2 tsp ground cinnamon
* 3/4 cup water
* 1/4 teaspoon salt
*
* EQUIPMENT
* 3-quart (or larger) saucepan
INSTRUCTIONS
* Chop the peeled and cored apples
* Put the apple chunks into the saucepan.
* Put the lemon peel, orange peel, cinnamon fresh ginger
* Pour in the water, and stir in the salt.
* Turn the heat up to high and bring the pan to a simmer.
* Turn the heat down to low and cover the pan.
* Cook for 20 minutes, or until the apples are very soft.
* Remove the citrus peels, cinnamon stick, and ginger
* I put in blender to make smoother

Your welcome….My friend gives me 30 pounds of apples and I make some to eat and then I freeze the rest in food saver bags. Her apple trees did nothing this year she thinks because of the late snow

Did you know you can peel ginger with a spoon? It’s actually easier, and certainly less wasteful, than using a vegetable peeler. I learned this just a couple years ago.

I didn’t know that but except for the dead of winter, I have ginger in the garden and the peeling just pops off that. It’s really fun to peel the fresh ginger.

years ago we had access to large pear tree, someone told me about pear relish, found in the blue ball canning book, turned out really good, I had so much I had to cook in one of those big roasting pans placed over two burners, was good with pork, have you ever tried it>

My Grandparents had a pear tree that generally produced in overdrive…Grandma canned pears and also made pear honey and gave lots of it away. The tree always looked like the branches would break with the weight of all the pears.
