Yesterday I made these Air Fryer Twice Baked Potatoes in the air fryer. I have the air fryer out in the sun room and I can close the door and keep the heat in that room so it was great.
I didn’t take pictures but the potatoes were so good. I love twice baked potatoes. I baked four so I stuffed two for the freezer and kept two out for us to eat. We each only ate half a potato so we’ll have them again in a day or two.
I pretty much followed the recipe. I scrubbed them, poked holes with a fork, mixed salt and seasonings with the oil and rubbed the skins, and followed the recipe.
This is my new favorite spice mix. It’s Weber’s Garlic Parmesan seasoning mix. I get mine at Sam’s Club. Walmart has it online (not sure about the stores), and Amazon has it but it costs way more than Sam’s. The place we like burgers brushes the top of their buns with melted butter and sprinkles this stuff on top and it is so good. I used this with the olive oil and salt for the potato skins.
When scooping out the potato, I use a grapefruit spoon with a serrated end – makes the scooping really easy and I’m less likely to pierce the skin.
Anyway – that was a great recipe and the air fryer worked well.

All the Weber seasonings are sold here t Home Depo in the barbecue department. I will look for this one. The Kansas city Rub is amazing as well.

I usually order it from Sam’s but since Home Depot is a place I end up (along for the ride) far too often, I’ll check for the KC Rub. Thanks!

I use bacon drippings on the skin of our potatoes. Now I will start adding a spice.

Oh, I need to try that. Vince is one of those crazy people who does not believe bacon grease is the biggest part of the food pyramid! It doesn’t matter what I fix, he will ask me if I put bacon grease in it. He swears I use it on everything and I do not because he truly thinks it’s going to kill him.
