My friend called this morning to tell me one of the stores in town had Russet potatoes and it was 15 pounds for $7.99. Walmart has them listed online 10 pounds for $8.77 or 8 pounds of Jumbo Russets for $10.88. Vince heard me talking to her and asked what was on sale at the grocery store, then he asked if I wanted to go. No. Fed Ex was supposed to be bringing another phone and the dehydrator and I didn’t know if I needed to sign for those. Vince said “I’ll go and I can run by the pallet store.” Then we had this conversation:
Vince: How many bags of potatoes do you want me to get?
Me: Get one bag unless they look super good, then get two bags.
Vince: Was anything else on sale?
Me: They have 5 pound bags of Yukon Gold and red potatoes on sale for $2.46 per bag but the russets will be enough for me to get processed through the weekend.
He left, went to the grocery stores, the pet store and the pallet store. Came home with three 15 pound bags of potatoes and three 5 pound bags of Yukon Gold and 2 five pound bags of red potatoes. That’s 70 pounds of potatoes I’ll be canning . . though I’ll keep out some of the potatoes for using over the next week or so.
I’m not complaining. If potatoes get harder to get, at least we’ll have some canned.

Good Morning Judy, I just ordered my Nesco canner and the first thing I want to can is potatoes. Is there a chance you can explain what you did to can the french fries? I’ve watched dozens of you tube videos and well I just trust you after all these years. Just thought I’d ask…you definately inspire me to get back to canning and try pressure canning for the first time. Thanks
