I’m still in the “experiment with hominy” mode. Yesterday morning I asked Vince if he was ok with adding some hominy to breakfast burritos. He’s a good sport when it comes to my food adventures. We have less than a quart of milk left til the milk man comes on Friday so cereal is not happening which means breakfast gets cooked and we have juice to drink.
I’ve mentioned before that we have breakfast around 10:30 or 11 most mornings. When I get up, I usually head outside after taking the dogs out and feeding them. Vince is more of a wake up slowly kinda guy. By the time I’m hot and tired from working outside, he’s ready to go out and he’ll work til about 10, then come in and cool off and we’ll eat. But, he does usually eat cereal or peanut butter and toast around 6:30 or 7.
Then after eating breakfast at almost lunch time, we have our evening meal mid-afternoon. If we’ve had cereal at 10:30, then we usually eat dinner by 2:30. If we’ve had a big breakfast at 11, then we have dinner closer to 4.
I took the picture because seeing the cast iron on the stove makes me happy. I so rarely use anything else. Then I realized the picture shows that I’m just finishing up breakfast at 10:48 a.m.
I took the leftover fried hominy, mixed it with a bit of water and heated it up in the pot with the lid on the middle back burner, then mashed it with the potato masher. We also had potatoes, bacon and scrambled eggs.
There was the breakfast burrito being assembled.
Vince approved of the hominy mixed in with the eggs, bacon and pepperjack cheese.
The hominy is canned in pints and that’s a bit more than the two of us eat at one meal but probably not enough for a second meal so it’s nice to find some creative ways to use smaller amounts of leftovers.
