It’s so nice to have food in jars. This morning we went to town. By the time we got home, unpacked the car, got things put away, I did a more thorough cleaning of the kitchen than I had done last night after finishing the onions, I was tired so Oscar and I took a nap.
I knew that dinner today was going to be Stuffed Pepper Casserole from a jar.

I cooked some rice til it was almost done, poured the contents of the jar in with the rice, gave it a good stir and let it simmer on low with the lid on til the rice was tender.

The peppers in the stuffed pepper casserole came from the garden. The eggplant came from the garden. The guacamole came from avocados that were on sale at Food 4 Less – 6 small avocados for $1.

Yes . . one dollar! I used three to make the guacamole so that’s 50 cents worth of avocados. Can’t beat that. It’s also nice to be eating a bit from the garden.
