Thank you all who responded by comments or email about choices for eating out. I do feel better knowing I’m not the only one who struggles with this. In Vince’s defense, he never squawks about anything I cook. Well, every now and then he doesn’t like something. I can probably count on one hand the number of times I’ve fixed something he doesn’t like and every time, it probably involved cilantro. I can’t imagine being the non-cooking spouse and sitting down to a meal, not even knowing what’s about to be served. Except for spaghetti on Sundays, I pretty much only cook what I like or what sounds good to me.
I think, for us, eating at home and not going out would be the best solution but I’m never going to fry chicken and I’m never going to fry fish and I know Vince loves those things. I do think he’ll be a little more considerate of my likes and dislikes as far as restaurants go.
Yesterday I smoked a chicken. I have been wanting rotisserie chicken so I seasoned up a chicken on Thursday evening, then realized it was way too big for my rotisserie so I was going to roast it yesterday but then I decided to smoke it so I can boil the bones and carcass for smokey broth to mix with the regular broth I have waiting to be canned. I can then use that to cook beans this winter.
We had 3 Bean Salad (out of a can from Aldi), corn from the neighbor’s garden and potatoes from my garden.
I think I may freeze the leftover smoked chicken and use it in a gumbo once it gets cooler. It is going to get cooler some day, right? 🙂

Do you heat up the three bean mix?

I do not. In fact, I put it in the fridge for a few hours before we eat it.

I consider myself lucky, as my husband loves to cook, which is great except the washing up, never enough room in our dishwasher for all that he uses, but hey at least I don’t cook 100%.
