Back on June 10, I wrote a post about canning red beans. Here’s the post where I finished up the canning.
This post is mostly for me so I will be able to find what I did and not have to search for it each time I want to make more red beans to can. 🙂
I used:
- 6 onions
- 6 bell peppers
- 1 bag of celery
- garlic – probably about 6 Tablespoons of chopped garlic
- 6 pounds of small red beans
- 4 pounds of sausage
- 4 pound of ground beef
Today we opened a jar for lunch. I fixed a pot of rice and made a few little snacky things to go with it.
I do believe this was the best beans I’ve ever made. It was so convenient to open that jar, dump it in a pot, add a little water to the jar and swish it around, boil the beans for a few minutes and eat.
When I made this, it filled 19 quarts. The big canner holds 14 quarts and the small canner holds 7 quarts so I need to try to get it closer to either 28 quarts or 21 quarts. No need to waste space in the canner.
Because I think we’d be fine with a little more meat, here’s what I’m going to do next time:
- 8 onions
- 8 bell peppers
- 1-1/2 bags of celery
- 8 T. chopped garlic
- 7 pounds of small red beans
- 7 pounds of ground beef
- 6 pounds of sausage
This is the video I watched and may watch again just to be sure I’m putting in the right proportions of beans/liquid in each jar.

You’re probably right but I am mostly staying off it. Today, just heating up the contents of a jar and cooking a pot of rice . . I wasn’t hardly on my foot at all. Last night was the first night I could sleep without it keeping me awake and I think today will be better. I am trying but life does go on and so many things have to get done. I’m not canning or doing much outside. Ughh . . I haven’t done laundry and I should have done a couple of loads today. I’ll use the dryer and not hang the clothes outside. See . . I’m trying.
