Don’t fuss at me! We have to eat. I’m doing pretty good at sitting down in one chair with me foot propped up and doing all the chopping and prepping. I tried propping my foot up while standing at the stove but that didn’t work so well. This meal was so delicious and I really didn’t have to stand that much since I did all the chopping, grinding and milling while sitting.
The ground beef in the picture is just for the picture. I used a jar of ground beef that had already been ground so all I had to do was dump it into the pot and be done with the meat.
I put the rice on to cook, then sat down and chopped everything else. I did have to stand for a little while to saute everything, then stir it all up and then it went into the oven to bake.
Look how good this looks while still in the pot.
Here are the recipes I used for yesterday’s dinner and I highly recommend both:
Cajun Eggplant Dressing (If it had been just me, I would have added chicken livers but Vince doesn’t like them so much).
The good news is that the Eggplant Dressing made enough for at least three meals.
One dish was baked. Two were placed in the freezer. By the end of the day they were frozen solid so I removed the contents and placed it in bags, vacuum sealed the bags and back into the freezer they went. When we’re ready to have it again, I’ll take a bag out of the freezer, place the contents back in the same size dish, let it defrost and bake it.
Today I’ll fix something easy – from a jar or the freezer and try to stay almost completely in my chair.

Vince needs to go to the store and get you one of those things people get when they have foot problems or knee problems. Like a wheelchair for your leg! Rolls around. My Friend Shirley got one for $135.

The main things I have to do are go up and down the stairs and outside with Oscar so that wouldn’t work. Otherwise, I’m pretty ok without sitting.

Knee scooters have their problems, too. I rented one after ankle surgery, and only used it a couple of times. It has a large turning radius, so you have to make lots of Y-turns when using it around the house. The turning radius is intentionally large because they tend to tip over. It was easier to scoot around in an wheeled office chair.
