This morning Vince and I had a quick bowl of cereal and I got busy. I ended up canning all the ground meat that wouldn’t fit in any of the freezers or that had been thawed more than I was comfortable refreezing. I canned three packs of boneless chicken breasts. The last load of ground beef is still in the canner.
Yes, the stove is a mess. Ground beef is a greasy, messy thing to can.
I needed boiling water to be able to rinse the meat several time to get rid of the grease so Vince set up the Camp Chef stove just outside the garage door.
There’s a walk through door just to the right of the garage door.
I am very tired but all the ground beef and all the chicken that needed to be canned is done, or it will be done as soon as the last canner is finished.
There was a brisket that had defrosted enough that I felt like I should not refreeze it so I seasoned it last night and put it on the smoker before I started canning. By the time the canning was done, the brisket was ready.
Of course I had to taste it and it is awesome. I’ll divide it up, vacuum seal it in several meal size pieces . . hmm, I was going to say I’d freeze it but there’s no room to freeze anything. Not sure what I’ll do with it. Maybe there’s something we can use up quickly – frozen juice, ice cream bars, Rita’s dog food. I don’t know . . I’ll figure it out. Smoked brisket isn’t going to waste!
The last canner is done so I’m going to go get everything out, take Oscar for a walk, then take a shower and see if I have the energy to stay up and cross stitch.

OH my gosh! You deserve to put your feet up for the rest of the night after all that. Yum that brisket looks good!

Judy when you can your ground beef. Do you pack it tightly or loosely in the jars? Do you have a specific amount, ie: so many cups of cooked ground beef in a quart, or pint jar? It’s on my list. Just did 10 pounds of red potatoes, have another 10 to go in the next couple days. I know I’m not a canning machine as you are–but trying to get a start on this. Love to have things meal ready.
