Yesterday when I started canning the potatoes, I had hoped to get half of them canned yesterday, finish up today, then start the carrots Wednesday, can half of them and finish on Thursday. I don’t know how I managed but I got all the potatoes canned today.
My favorite potatoes to can are the small red potatoes. They don’t have as much starch as some potatoes that get kinda “gunky” when canned; they hold together fairly nicely. If I had more jars, I would get more potatoes and can them but I’m going to run out of jars before I get everything canned that I want to get canned.
I canned all of these in quart jars. Depending on how I serve these, we will often have leftovers for a second meal.

They work for potato salad, potato soup, scalloped potatoes. They’re just a great addition a supply of food that’s ready to heat and eat.

I don’t know if you have already been there or not but the Carthage Hardware on the north side of the square had advertised they have canning supplies. When the new owner remodeled he had old tools used by his dad and granddad made into the guardrail and painted black to go around the steps to the lower level. I don’t can any more but I loved caning too. My husband loved having a big garden and he would also help me. Good memories.
