I’ve always been a fan of Dave Ramsey’s financial advice and I love it when he says “eat beans and rice and rice and beans”. The point is . . save money anywhere you can and learn to eat cheap food til you can find your way out of debt.
Yesterday I fixed beans and rice for dinner. I had canned a lot of it the other day for quick heat and eat meals but I made this from dry beans that I had soaked overnight Monday and then cooked yesterday.
Vince and I were both talking about how good it was and I was telling him that some of my favorite meals are considered “poor folks meals”. There’s hardly any kind of dry bean we don’t like. I understand (maybe) that not everyone has to like everything I like but I feel bad for people who don’t like beans. They’re so good and so many ways to fix them. If you don’t have health reasons for not eating them, they’re fairly nutritious and a great food to store for hard times.

Right! I love beans and never mind eating them. Maybe it’s because we also ate so many growing up. My grandparents had a huge garden and canned lots of peas and beans and sent them home with us so we either ate those or dry beans. We rarely had storebought canned beans or fresh beans growing up.
