I almost needed a bigger pot!
Cajun Redhead seasoning is about all I need for this recipe (or any recipe).
I had two almost empty containers of seasoning so I finished off both of them. Vince came by and saw two empty cans in the trash and he said ‘Tell me you didn’t use two containers of that seasoning!” He isn’t as crazy about it as I am. I said “No, but would there be a problem if I did?” 🙂
I was thinking I needed 19 quarts to fill the big canner but it’s 19 pints. Only 14 quarts fit so I had to grab another canner. That kinda feels like a waste of propane but . . next time I’ll hopefully remember . . 14 quarts/19 pints. At least I wasn’t trying to do it on the glass top stove!
Also you can see that I started cleaning the big pot. Bar Keeper’s Friend and a little elbow grease makes for a fairly easy job. I need to get outside and scrub it out there – it’s a messy job. The other canner isn’t quite as bad but I’ll clean it up too. I think those are the only two I used outside in Texas.

Your stove handled the two canners so nicely. I use colored index cards to make notes and put them just inside a cabinet door. Like the ding dang mixer that uses numbers instead of saying what that speed does mixing.!! I think I can almost smell those onions and peppers cooking….
