You may remember that I had meat stuffing left over after making the stuffed kale several weeks ago. I shaped the leftover meat mixture into balls and froze them on a cookie sheet. Once they were frozen, I dropped them into a zipper bag and kept them in the freezer. I bought more giant, flat leaf kale at the farmers’ market and used the frozen meatballs to make 11 more stuffed kale leaves.

There’s “sauce” in the bottom and sauce on top.

Three meals in the freezer! So many times when we’re busy or out and thinking about getting something out, it’s a freezer meal that convinces me to eat at home instead of eating out. I’d much rather eat at home but sometimes, there just isn’t time to get a decent meal on the table. Freezer meals to the rescue! 🙂
