While lentils have never been near the top of my favorite food list, I don’t mind them. For several reasons (cost, nutrition, ease of storage), I have been trying to cook them at least once a week. I would say I had never heard of black lentils, which are also called beluga lentils because of their resemblance to beluga caviar, but I found a bag in my pantry that I had ordered in November but had never used. Totally do not remember why I ordered those.
A few weeks ago, I was looking for lentil recipes and found a recipe for Spiced Lentils with Yogurt and Mint. Immediately, I added black lentils to my Azure Standard order and last night I made this dish and it was delicious. Addie, of course, wouldn’t touch it but Vince liked it and I liked it.
My plan was to cook beef, mushroom and barley soup yesterday. I had defrosted a sirloin steak to use for the beef but it looked so good, I asked Vince if he’d rather grill it and he said yes so we grilled the steak, had corn on the cob and the lentils.
As soon as I decided we’d grill that steak, I grabbed two pounds of ground beef out of the freezer – one for hamburgers and one for ground beef, mushroom and barley soup. That’s three days in a row of eating beef. I believe I’ll take Benadryl before dinner today and tomorrow – especially since Addie is here and we’ve already made one E.R. run in the past few days.

Koshary/koshari is an Egyptian food that uses lentils. It’s kind of like a red sauce in that everyone uses the same ingredients but everyone’s tastes different. It’s essentially macaroni, rice, tomato sauce, lentils, chickpeas, and fried onions. The nice thing is that everyone builds their own bowl, so if there’s something you don’t like it’s easy to leave out.

A friend of mine made a very good red lentil soup a couple of years ago. I bought red lentils to make it, but I never did. I’ll have to see if I can figure out where I put the recipe…or just ask her to send it to me again!
