A few days ago, Twyla commented and mentioned a Lemon Meringue Cake. I promptly responded and said “I need that recipe”. She sent it to me and it was a recipe from Lovin’ Life at the End of the Dirt Road’s blog. I’ve followed her blog for a very long time. Somehow, back in 2014, I missed this recipe so I’m very glad Twyla mentioned it.

I know . . the meringue is weeping. I took this out of the oven and stuck it in the fridge because I was in the middle of planting my Egyptian Walking Onions and didn’t have time to wait for it to cool.
This is such a great cake. I can see this becoming my go to dish for pot lucks. It’s so easy to make and who doesn’t love a cake that is made and left in a 9 x 13 pan?
It’s made in a 9 x 13 pan but if you wanted to take the time to weigh out the cake mix and divide it in half, this recipe could easily be cut in half but . . I’d be more likely to double it because it’s so good.
Since it’s cold, it’s great to have just a small sliver of it when I came in from working in the garden . . which I did a couple of times but I also had a good sized square of it.

When a pie meringue would weep, my grandmother would say that they were angel’s tears, because the pie is so good that the angels wept over it. I know that the experts all frown over weeping meringues; however, I can’t help but agree with the angels.m

I like that way of thinking. It’s much better to smile and think about angels wanting my pie than to feel inferior because my meringue wept (it never bothers me . . it still tastes good!).

Saw this and thought YUM! Then thought, oh wait a minute, hubby doesnt like lemon…..sigh….and THEN I thought – wait a minute – he doesnt like lemon but he loves lemon merangue pie! Guess what I just printed out to make sometime soon!

He doesn’t like lemon but likes lemon meringue pie? That doesn’t seem right but there are things I say I don’t like but in some forms I do like. I don’t like chocolate but I love Almond Joy. Every time I want one, Vince reminds me I don’t like chocolate.
