April left a comment that she can get rhubarb in her grocery store and asked about recipes. Most any recipe that includes strawberries and rhubarb is going to be delicious. Pies, bars, crisp, jam . . you just can’t go wrong. As I was looking online, there are a ton of recipes. Some of them don’t look good to me but obviously, look good to someone else so my suggestion is to google rhubarb recipes and see what looks like something you would like and then, if it’s good, share the recipe with me! 🙂
Last year I made these Rhubarb Custard Bars and they were so good. This is probably the first thing I’ll make when I harvest rhubarb. My friend had given me the rhubarb and they don’t really like it but I took some of the bars to them and they loved them.

Rhubarb is very tart but mixed with something sweet, the tartness really adds to the flavor.
Last year I cut up some of the rhubarb, soaked it in a simple syrup – not terribly syrupy but enough that the rhubarb absorbed some of the sweet. Then I freeze dried it and everyone who has tried it thinks it tastes like rhubarb candy.

In my area of Texas it is in my stores for quite a while. (Dallas area) Must get some and try this. (Think I can get it frozen in larger stores as well)

Raspberries and rhubarb is my favorite combination since I’m not fond of cooked strawberries. Alas it will not be rhubarb season for quite a while here which is good since there were still snowflakes coming down yesterday.

I’ve never tried raspberries with rhubarb. We did plant raspberries so maybe in a year or so we’ll get some of those too.
