From about 7 til 10, I was in the kitchen. There’s good news and bad news! Which one would you like first? OK . . the bad news because it kinda turns to good news.
Vince had loved the whole oat groats I fixed last week. The recipe was 1 cup oat groats and 4 cups of water in the Instant Pot for 18 minutes, then 15 minutes or so of natural release. It made a lot of oats and Vince ate the leftovers for three breakfasts.
We had re-arranged the food buckets in the downstairs garage and there was a bucket of oats that was halfway used so we left that one out. This morning I grabbed a cup of oats out of that bucket, added that and 4 cups of water and a bit of salt to the Instant Pot, set it for 18 minutes and got busy with other things. They sat for about 20 minutes after they were done cooking so all in all, they were in the pot for probably 50 minutes.
Vince was out working on the pots for the tomatoes so I went and got him to come in and eat. I opened the Instant Pot and there was still about 3 cups of water in there. Wait a minute . . this isn’t right. I backtracked in my head to make sure I had set it right and I had. I looked at the oats! NOT oats. It was spelt. Apparently I used all the oats, put spelt in the bucket and didn’t change the label.
I said to Vince . . I think this is spelt instead of oats. He said “Fine. I’m sure it will be good.” I drained the grain, put butter in a skillet and lightly toasted the cooked spelt. We added a bit of honey, some freeze dried strawberries and we ended up really liking it. It has more “bite” than oatmeal does but not as much flavor. I think it may be something we have again.
Other than that, I got bread started.
Made Swedish Meatballs for our meal today. I doubled the meatball recipe and have some flash freezing in the freezer now so we’ll have enough for two more meals from the freezer.
The plan was to have Black Eyed Pea Salad tomorrow with leftover black eyed peas that I was going to cook with yesterday’s meal but Vince wanted fried chicken yesterday so I cooked the black eyed peas today, and even though they don’t really go with Swedish Meatballs, noodles and baked sweet potatoes, that’s what we’ll have.
I filtered the cold brew (King Cake Coffee . . yay!) so I’ll have that for the next few days.
By the time I was done with everything, the bread was ready to go into the bread pans so I’ll leave it to rise and then I’ll go up, cook the noodles, heat up the rest of the food and bake the bread.
After the kitchen is cleaned from all that, I should be able to sit and stitch for the rest of this cold, rainy day.
