Yesterday I made the Crack Chicken. There are several versions of it out there so check around and look at several to find on you think fits your tastes. This has to be one of my favorite meals. It’s so quick to fix and so good.
We had roasted artichokes brussels sprouts with it and drizzled Blackberry Ginger Balsamic over them. So good!
I asked Vince “On a scale of 1-10, how do you rate this meal?” I ask him that often and I’m not even sure he tells me the truth but he said 9. I said “What would it take to make it a 10?” He said “Serve it over pasta!” Oh, I can do that! Next time, we’ll have it over pasta. I have served it that way before but my preference is over rice.
I had gone to get my hair cut and the lady knows I love to cook. She asked me what we were having for dinner and I explained that we usually eat between 2 and 3 and since I had a haircut at 2, we had already eaten and showed her the picture.
She wanted the recipe so I sent her the link. She thinks she may have an electric pressure cooker but knows she has a slow cooker so I told her she could find a similar recipe on the internet for a slow cooker.

Yes! I love that she does both sometimes. There are many variations out there for both the Instant Pot and the slow cooker.

You’re right – brussels sprouts. Today we’re having artichokes and that must have been what I was thinking about.
