Over a week ago, I found marked down bell peppers. I bought 12 of them, thinking I would make stuffed bell peppers for the freezer. I never got around to making them and didn’t want them to go bad so I cut them into good sized pieces, vacuum sealed them and stuck them in the freezer.
We both love this Stuffed Pepper Casserole so I put two cut up peppers in each bag – just what I need for making this recipe. Bell peppers get kinda soft after having been frozen but they get soft after having been pressure cooked or baked so that’s not going to be a problem at all.
This recipe makes 6 servings so with enough peppers to make 6 batches, that means 18 dinners for the two of us.
Everything that’s in this recipe, I have here all the time to make it. My spinach will last in pots til it gets a bit warmer and I may run out of mozzarella, but for the most part, at this point, this is a “free” meal for us by using what’s in the pantry and what’s in the freezer.

Timing is everything! I have a bunch of cut green bell peppers that I’ve had frozen for months and have been thinking, I’d love to try to make a a stuffed pepper casserole (as I love regular stuffed peppers) and have been going to look it up for weeks now. Before I checked your blog, I thought to myself, I’m going to look up stuffed pepper casserole after I’m finished blog reading. And, lo and behold, I see this post!
