When I was here by myself, I smoked salmon once and took some of it to Jeremy and Angie. I had no idea if they even liked smoked salmon but it turns out that it’s one of Angie’s favorite things. I’ve shared it with them a few times since then.
Yesterday afternoon, Jeremy texted Vince and said something like “If I buy two pieces of salmon, will you smoke them – one for us and one for you?” Vince never looks at his phone so Jeremy texted me and said to tell Vince to look at his phone. Vince was out cutting grass so I looked at it and wrote Jeremy back and told him he didn’t need to buy one for us . . I have one in the freezer so if he’d let me know when he was going to do it, I’d take ours out to defrost and smoke them both.
He wrote back that he was heading to Sam’s to get two pieces of salmon and they’d bring them by “in a couple of hours”. Whew . . I need a couple of days to get things looking presentable but it wasn’t too bad when they got here.
They have a new puppy too so they brought her. She’s only a couple of weeks older than Oscar. I forgot what kind of dog she is but she should be 20 – 30 pounds when she’s grown. She’s a cute one! She has been going to obedience school for four hours every Friday so I figured she would be calm, cool and collected and Oscar would be a wild man.
Oscar never goes upstairs except when he sneaks up, so I honestly think that with Angie holding their dog, Oscar thought we were at the vet and he was very quiet and shy. Their dog kept barking and wanting to play with Oscar but we both held them – I don’t dare let Oscar down on the carpet unless he’s just gone outside and I saw him do what he has to do. Their dog was really wanting to play. Oscar stretched out on my lap – never made a sound; never tried to get down. So out of character for a dachshund – at least the ones I’ve had.
Vince took care of salting the fish and we’ll smoke it so it will be ready to eat a little after noon. Jeremy and Angie are so nice!
Our neighbors behind us had brought over soup when I was sick so I stuffed their container full of pastalaya. I made Anadama Bread yesterday so I took them a loaf of bread and the pasta dish. The bread had just come out of the oven and was still warm. The recipe makes three loaves so I gave one to Jeremy and Angie to take home.
The soaker is 1 cup cornmeal and 1 cup water, stirred together the night before the bread will be made. I have no idea why but I made two soakers, which is a good thing since I gave two of the three loaves away. I’ll make three more loaves today. Never know when someone may need a loaf of bread! 🙂

Judy the bread looks really good. What kind of cornmeal do you get? I can get yellow cornmeal but it is usually quite coarse, does soaking it soften it up or does it stay gritty?

It stays somewhat gritty but we call it crunchy and that’s part of what we like about it.
