I grew up eating jambalaya and I love it. Probably 10 years ago, I heard about pastalaya, which is simply jambalaya but instead of rice, pasta is used. It’s kinda like . . add a bit of Italian to that cajun dish!
I am so close to running out of good Louisiana sausage that I’ve been rationing it and hardly using it at all but I have a trip to Louisiana soon so I can re-stock my sausage supply so I took out a package yesterday to defrost.
I took out a package of frozen pulled pork also. This morning after breakfast, I browned the sausage, added onions, bell pepper, celery; sauteed all that, added seasoning and a bit of chicken broth.
It can all simmer for a while, then I’ll add a bit more water, a jar of stewed tomatoes, pasta and let that cook til the pasta is done. Then I’ll add parsley and green onions and dinner will be served, along with coleslaw.
When I make this dish, my preferred pasta is bucatini but I didn’t realize I was out and I doubt I can find it around here so I ordered more. For today, we’ll use elbow macaroni.
Vince walked upstairs from the basement and said “WOW! It smells like a cajun kitchen in here!” That was so nice to hear. It really does. I was outside and came back in through the garage and even the garage smells like a cajun kitchen.

Thanks. It’s so easy and it was delicious. A neighbor had brought over soup when I was sick so I filled her container with the pastalaya and took that and a loaf of homemade bread to them.

I kept thinking there had to be at least one more pound of it here but I think I remember using my last package and thinking I needed to order more and then forgetting to do it.
