We have several appointments this week – I think I have to leave the house at least four days, so all of my meals need to be easy meals.
Meal #1:
Mississippi Chicken (slow cooker)
Mashed Potatoes
Black Beans
Meal #2:
Red Beans, Sausage
Rice
Coleslaw
Cornbread
Meal #3:
Beef Stew (to use the leftover cabbage, carrots and potatoes from the corned beef)
Crackers
Wheat Berry Salad
Meal #4:
Grilled Hamburgers
Fries (air fryer)
We won’t have much leftover for the freezer this week. We’ll make chicken quesadillas with the leftover Mississippi Chicken.
There will be red beans and sausage leftover for the freezer.
We’ll eat the leftover beef stew for another meal this week.
I’ll use a pound of ground beef for the burgers and make them later in the week and the leftovers, I’ll crumble and make Hamburger Mac & Cheese next week. It’s easy to stir up a small batch of Hamburger Mac & Cheese instead of using a whole pound of ground beef and making a huge batch of mac & cheese and then not eating it all.
