Last week we ate at one of the fish trucks in town and one of the things people comment most about are their kraut balls. We got some and loved them. Vince has been searching for a recipe for them and he’s sent me several recipes. I’m pretty anti-fry . . not for health reasons but for mess reasons. I found this recipe that uses the air fryer.
Honestly, I kept thinking . . he REALLY wants these. If I procrastinate, maybe he’ll try making them himself but that isn’t going to happen so today I will try making them.
Any of you mid-westerners or folks with German backgrounds have any tried and true recipes? The one I found looks pretty straightforward. I’ll have to use cajun sausage because that’s all I have here. The ones we bought from the food truck didn’t have much meat. Every few bites, I thought . . that tasted like a piece of meat so it definitely wasn’t the main feature of them.

That recipe with cheese in them sounds great. Granny always made a different kind that instead of cheese had mashed potatoes mixed in with them – I found a similar looking recipe here but have not made these myself.

It was probably a more frugal recipe (potatoes instead of cheese) since she was always making for a big crowd. Some had meat in them (bratwurst sausage) and others were just potato and kraut. We dipped them in some sort of creamy horseradish concoction. Yum – haven’t thought about those in many years.

That recipe looks good and it may entice me to finally buy an air fryer. Now, to do some research on those.
Do you think that you can freeze these kraut balls and at what stage? The recipe makes 24 balls and that’s a bit much for me to eat at one time or may want to eat for days.
