A few people have asked about my menu plans. I will go back to posting them. I’m sure not everyone is interested but I’m also sure not everyone is interested in cross stitching either. 🙂
It doesn’t matter if you’re having what we’re having and it doesn’t matter if you just want to look at what we’re having or if you want to make the same thing we’re having. 🙂
Most weeks, I will have four meals planned because (1) there will be leftovers, and (2) if we decide to eat out or have food delivered, that doesn’t leave us with extra food. If we end up needing an extra meal, there’s always food in the freezer or we can make sandwiches.
This is our meal plan for next week. I will try to post menus on Wednesday for the next week. I know we don’t all do things the same way but I find this way of cooking to be so easy and the meal planning saves time and money, plus we aren’t going out to eat often because I already have food waiting to be cooked!
Instead of listing the meals as Monday – Thursday, I will list them as Meals #1 – #4 and may cook them out of order.
Also, I cook three weeks and save leftovers in the freezer so the fourth week, all I have to do is heat up food from the freezer.
The menu shown below will be our menu #1 on the four week cycle, then March 7 will be menu #2, and March 14 will be week 3. March 21 will be week #4 and that will be leftovers and eat out of the freezer week. Make sense?
So, here’s my plan for next week:
Meal #1:
Baked ham
Funeral Potatoes
Green Beans
Salad
Rolls
Notes:
- I use Panko instead of Corn Flakes.
- I mix it all up and divide it in half, freeze half of it BEFORE putting the Panko/butter on top.
Meal #2:
Crispy Cheddar Chicken
Steamed Broccoli
Salad
Fried Cornbread
Notes:
- I cut the chicken into very thin strips (cutting through the thickness) so it may look like three thin chicken breasts instead of one.
- For fried cornbread, I mix up half a recipe of cornbread, melt a little butter in a skillet and cook the cornbread like pancakes.
Meal #3:
Chicken Piccata
Pasta
Pinto Beans
Salad
Garlic Bread
Meal #4:
Lipton Onion Soup Meatloaf
Scalloped Potatoes
Dilly Sweet Carrots
Salad
Freezer Meals (Leftovers that go into the Freezer for Week #4):
- Funeral Potatoes from Meal #1
- Ham from Meal #1
- Pinto Beans from Meal #3
- Chicken Piccata from Meal #3
- Meatloaf from Meal #4
- Scalloped Potatoes from Meal #4
What I can see from this list is that I don’t need to include potato dishes that work well frozen in Weeks 2 or 3 because we’ll have two potato dishes in the freezer.

???You are right…I don’t x-stitch, I don’t use a menu, I live at the bottom of Africa, so I don’t even know what snow or sleet looks like…..and on top of that, I have work to do, so I have no business wasting time reading about other people and their lives….But I like reading what you write???… and I enjoy your adventures with Addie a lot. I admired you for driving 10 hours to pick her up for a short visit….and am happy that you now get to see more of her with less driving. Thank you for sharing your life with us. ?? I like seeing your menu plans. I rarely follow them, but I love your recipes that you share. I have a special “Judy” file where I save recipes that you have recommended. I have several of your past recipes that I use regularly. Anyway, thanks for posting your menus so I have some ideas about things to cook.
