Fruit Pizza Recipe

It seems like 30 years ago, fruit pizza was so very popular and I hadn’t thought about it til Addie mentioned having made one the other day. This is the recipe I “kinda” followed. I halved the recipe for the icing and it made more than enough for a small sheet pan (affiliate link). I love these pans because they fit in the Ninja Foodie Flip air fryer/toaster oven.

I had about half a batch of sugar cookie dough in the fridge already so I used that and even with the small sheet pan, I cut it half before adding the icing and fruit. Back when I used to make these often, I remember that leftovers got a bit icky from juice leaking out of the fruit.

As I showed with the original post, I drained the fruit as much as I could and I don’t remember if I did this back when I used to make them.

The “icing” in the linked recipe was so much better than I remember my icing being. I’m wondering if when I made them before I maybe used granulated sugar instead of powdered sugar. Who knows?

Anyway, last night after dinner, I had planned on making the second half of the pizza because there’s more than enough icing left and I had more than half the fruit left. Vince and I were both not very hungry so I asked Addie if she wanted the one piece that had been leftover from the previous night. I expected it to be kinda runny and not so great but . . it was better than it was the first night! I was surprised.

She’s going home today so I asked her if she wanted to take half the cookie crust, the rest of the icing and cut up fruit and make it for their dessert tonight. She was delighted to be able to create dessert for her family.

I will definitely make this recipe again.
