This is day 6 in the basement and we’ve picked up food once, ate out once and eaten leftovers or food I had frozen for this adventure. This morning, I cooked breakfast.
I’ll admit it’s a bit of a challenge. There’s not much countertop and by the time I have the hot plate, the toaster oven and the coffee pot on there, there isn’t much room. With one hot plate, I have to cook one thing, take the pot off . . and put it . . where? I put some heavy towels on the floor so I wouldn’t be sitting a hot pot on the ice cold concrete so that’s what I’ve been doing.
I cooked grits in a pot but didn’t have measuring cups so I had to guess at the amount of liquid and grits. It worked out. Vince eats grated cheese in his grits. I brought the cheese grater but no cheese. There’s a whole drawer in the fridge down here that’s full of cheese but no cheddar. In my digging around in the fridge, sure I’d find a block of cheddar, I found a zipper bag with some already grated cheese. Didn’t see any mold so that was good!
I cooked the bacon in the microwave. I learned that a $50 microwave apparently doesn’t have a lot of “waves” because it took 10 minutes and the bacon still wasn’t done so I transferred it to the skillet once the eggs were done.
Toast in the toaster oven/air fryer.
No comment on the amount of butter on my plate needed! 🙂
Dishwashing in the bathtub . . It’s not so bad . . wouldn’t want to do it forever but it is do-able.
Vince was pretty surprised to get a big breakfast. As we were sitting at the plastic table, eating, looking out the windows, he said “This is a pretty good setup, isn’t it?” It really us and I’m so thankful we’re able to stay here and not be in a hotel.

I have done it but the splatter is definitely a factor plus, I had toast in the air fryer/toaster so I couldn’t do two things like that at once.

When we remodeled our kitchen years ago, we were told it would take a month. It took three month. To begin with I was cooking in the microwave but I didn’t have a hot plate. I did have an electric skillet at that time. I was also washing dishes in the bath tub. By the time month three started we had moved to only eating microwave dinner. It got pretty scary because I was beginning to think they tasted pretty good. Luckily we we all ate out at lunch at either school or work so we only had to eat dinner at home. We had all given up on any kind of breakfast.
