How long can we drag this out? Don’t answer that please.
I think it was in September when the floors were damaged. The hardwood floor guy came out and looked at them and said he could put us down for January 31 – that was the soonest he had an opening. OK . . January 31 it was. He told us . . if I get behind it could be February 2 or 3 before I get here but it should be that week . . unless there’s a lot of snow. He’s about 45 minutes from here.
He told us Friday, January 28, that he was not going to be finished with his job and it would be Wednesday before he could get here but . . the weather was looking like it could be a problem . . and it was.
We had snow yesterday and today. The floor guy and Vince talked this morning about him coming tomorrow. Vince told him none of our streets have been plowed and our driveway hasn’t been cleared so he’s going to come Monday.
The real problem is . . I had cooked and saved leftovers so we would have food to eat this week. We’ve been eating on that food and now . . we have no food. We have plenty of food . . just nothing prepared to heat up on the hot plate or in the microwave so today through Sunday, I’ll cook foods that will have leftovers. If I can get four meals ready in the fridge to heat up and one day Vince can go out and get pizza and we have stuff to make hot dogs.
IF he refinishes the floors on Monday, I think I’ll be to walk on the floors by Friday if I’m wearing socks and no shoes but we’ll wait at least a month before putting rugs and furniture back on the floors so we’ll be eating . . I don’t know where! I’m not inclined to eat in the living room because of spills. A month of eating in the family room might mean new carpet! 🙁
The sun room has tile but if it’s cold in there.
We bought a cheap 6′ plastic table with folding legs that I had planned to use when people came over to eat when I had the apartment in Nevada, MO. No one ever came over (since I only spent three nights there!) so I had never opened the box for the table.
Vince and I were talking about TV trays/stands. No . . I know as soon as we get something like that, he’ll want to use them often and I don’t want us eating anywhere except at the breakfast room or dining room table.
We were talking about maybe taking the breakfast room table into the downstairs garage (It’s heated). Probably not a good idea for two old people to try to move it with 8″ of snow on the ground.
Then I remembered the plastic table. I’ll put a shower curtain liner on the carpet, then put the old breakfast room rug on top of that, then set up the table, bring down a breakfast room chair (there’s already one down there where Addie sits to watch me when I sew).
Today I’m baking a ham and making a grits/corn casserole to go with it. I’m also making dinner rolls. Tomorrow I’ll cook a roast. Saturday I’ll make a pot of gumbo. Sunday I’m going to make a sweet & sour meatloaf and a meatloaf with onion soup mix. I’ll also make scalloped potatoes because that is what I always make with meatloaf.
Monday: Ham, grits/corn casserole, salad.
Tuesday: Roast, rice, gravy, corn, coleslaw.
Wednesday: Leftover gumbo, rice, potato salad.
Thursday: Leftover meatloaf, scalloped potatoes, green beans.
Friday: Leftover gumbo, rice, potato salad.
Saturday: Fried rice with ham.
In addition to the food I’m already cooking, I need to make potato salad for the gumbo and dressing for the coleslaw.
Plus, we’ll have leftover dinner rolls and biscuits for making ham sandwiches or roast beef sandwiches.
That was easy! 🙂

Your menu sounds so good. When we were first married, my husband always said if I broke the yolk on an over-easy egg, that was my egg. Not sure I broke too many, but some, and we got over that hurdle in a hurry. Hadn’t thought about that in 30 years. Too funny.

If I break the yolk in Vince’s egg, Rita gets it. I only cook the yolks for me .. Rita gets my whites and I do break the yolk for my eggs. The process is (1) I cook Rita’s whites. (2) I cook my yolks. (3) I cook Vince’s egg so if one of the yolks breaks, I put it in a container and Rita gets it the next day. I don’t usually fix eggs two days in a row but yesterday and today I did though yesterday they were scrambled.
