Addie is going home today. This morning I told Vince . . we have enough leftovers for all of next week. Is that ok with you? It’s actually our scheduled week to eat from the freezer and between what’s in the freezer and what’s in the fridge, we have:
- Pizza Casserole
- Hamburger Steak and Gravy
- Beef Tips
- Enchilada Meat (I only used half the roast I cooked)
- Spaghetti Sauce with Meatballs
- Honey Sesame Chicken
Vince said “That’s fine. If we want something different, we can always . . “
I thought he was going to say we could always go out and get something or go to a food truck and pick up food. But he said . . we could always make tuna fish or something.
I almost laughed because (1) that wasn’t what I thought he was going to say and (2) his “we” means me.
I’m ok with that because I’d much rather eat at home than go out but there are a couple of food trucks I like. One day next week, the fish food truck is going to be in town and I’d love to go there. Vince isn’t as crazy about fish as I am so we’ll see.
I’m so thankful that I love to cook and that Vince never complains about anything I fix and he doesn’t mind eating leftovers.
That means more cross stitching time for the next few days I hope.

The “we” made me laugh because I use that all the time. Last weekend I mentioned we needed to clean up some of the dog poop in the yard as some of the snow had melted. My husband went out to clean it and said that I meant him when I said “we” but in this case I really didn’t. It truly could have been me or our son. But I was happy he did it! Lol

I use to think I was a pretty good cook until my daughter and son-in-law moved in with us. Now I think I was just lucky to have a non-picky husband who loves to eat at home.

Oh .. that may be it. Maybe I’m not a good cook at all but Vince will just eat anything and brag on it. Hmm .. something to think about.
I probably shouldn’t say this but when Chad, Nicole and Addie left, it was after 6 – way after our dinner time. Vince said he was hungry. I said “I have a box of Tuna Helper”. I actually like it and figured he’d say no way but he said “I’ll try it” so that’s cooking now and definitely will not win me any cooking awards. 🙂

You are lucky Vince will eat leftovers. My husband won’t except for taco layered pizza that I make. I try to cook only enough for the two of us and if anything left, it goes out to feed the creatures of the night ( we live across fro woods)

We are VERY careful of where we go now. Three weeks ago we had 590+ new cases, Two weeks ago we had 1,108 new cases, this past week we had over 1,100 new cases. This is in a county of $49,000. Bethany and Jack are getting over it and we have another one of our ladies who just got it. I have not been to yoga in 3 weeks nor do I intend to go back until the count goes way down! We have not had knitting last week or this coming week due to so many cases here. I will not be joining any groups until this goes way down! It went from 50 to the 590! So I understand staying home! I am getting more knitting done at home! LOL

That’s how I feel . . home is the safest place to me. Good luck. It has to be so scary with your husband’s medical condition. You definitely don’t need it nor do you want to bring it home to him.

Absolutely! It really is scary. I don’t know for sure how his cancer is doing. All the doctor says is he is ok. What does that mean anyway!! The cardiologist is very good, and he is here 5 days a week. He lives in San Angelo and has been doing this for at least 25 years or more. We really like him. And it is good he is here. We are so glad Hendricks bought the hospital! Things have certainly changed!!

That was great for your area that Hendricks took over the hospital. So glad you’re happy with the cardiologist. That makes a huge difference.
