Last night I found a few recipes, showed five of them to Addie and asked her to pick two. She chose:
For the Honey Sesame Chicken, she wanted it to be like Panda Express Honey Almond Chicken. I told her I could add toasted almonds. She likes that idea and leave off the green onions. I told her we could put or not put green onions in our own bowl. She was happy with that. I’ll fix rice and salad to go with it.
For the Beef Enchiladas, she said she knows we like the beef but she just wants cheese enchiladas and she wants refried beans. I’ll fix refried beans and guacamole.
I added hot dogs and buns to my grocery list. I’m thinking today will be Honey Sesame Chicken, tomorrow will be beef enchiladas, Friday will be hot dogs and her parents plan to come and get her Saturday.
We still have leftovers too. She had hamburger steak and mashed potatoes (leftovers) last night and was thrilled with that meal. She’s pretty easy to cook for and she loves having a choice so I think the meals are all resolved.
I had a grocery order I was going to place for delivery but Vince said “Both cars need gas so I’ll take one down, fill it up and do curbside pickup.” Works for me so he has a 9 – 10 a.m. pickup today.
