Here’s how my “no cooking” day went yesterday!
First, there were homemade whole wheat pita pockets.

I had two packages of pita bread on my Walmart order Friday. Vince said “Why are you buying that? It’s easy for YOU to make.” I don’t know . . I guess my grandma made everything but I really don’t have to make when I can buy it . . but I couldn’t because they were out so I ended up making them and they were so easy and so much better than storebought. I made wholewheat so I’m telling myself they were healthy.

I made cream of wheat for breakfast.

Looking at the cracked wheat made me want tabouleh. This grain mill, even on the coarsest grind, is a bit too fine for tabouleh but I didn’t want to get the other mill out so . . it worked ok. Using this mill, I waste a lot because I sift out the finest grains.

I figured if I was making all that, I might as well make falafel.

We ended up finishing off the prime rib from last week, falafel with tahini sauce, and tabouleh. Not exactly a meal where everything goes together but it was what we wanted and . . there’s leftover tabouleh!

Today we’re having the leftover chicken from the other night served over baked potatoes and tabouleh. Dare I say that today I hope to not spend so much time in the kitchen?
