Remember I told you I was in bed at almost 3 a.m. adding to my grocery order? I’ve always heard to never go grocery shopping when hungry. Let me add . . do not buy groceries when half asleep.
I was very thankful Vince was not helping unpack the groceries when they arrived yesterday.
When I was adding to my order Thursday night way late, I remembered I needed spinach. The first one I clicked on and added two packages was small. Then I saw one that was larger so I added two packages of that, meaning to go back and delete the first two. Then I realized both of those were organic and I don’t usually buy organic. I saw the big tubs that were non-organic and I added two of those. Did I remember to go back and delete the other four containers of spinach? No! When I started putting the groceries away, I thought “I didn’t order SIX tubs of spinach!” Then I remembered . . I did.
You can bet there will be lots of spinach added to our meals over the next week or so. Today I’m adding spinach salad to have with our soup. I just use fresh spinach, boiled eggs and water chestnuts. Then I use French Dressing. Delicious!
French Dressing:
1/2 c. oil
1/4 c. cider vinegar
1/2 small onion, chopped
1/4 c. sugar (and maybe just a tablespoon more) The recipe originally called for 1/2 cup sugar.
2 T. Worcestershire Sauce
1/4 c. ketchup
I use the stick blender so I stick 1/2 an onion (not chopped) in a wide mouth jar, add the remaining ingredients and stick the blender in there and blend til everything is blended.

ah the great thing about spinach is you can braze and then freeze it. 🙂

That’s a lot of spinach! 😀 I love fresh spinach in salads and sautéed spinach (esp in an omelet) but I’m not a fan of plain cooked spinach. My husband and son love it that way so sometimes I’ll make it just for them and if I eat it I will add soy sauce.

I’m with you, though I do love creamed spinach and I have a good spinach meat loaf recipe which I may make this coming week.

I believe that was husband’s favorite salad! We also put fresh bean sprouts in ours. Adding chopped bacon to it made it a meal in his opinion! Serve with French bread! We tried canned sprouts one time; sorry we had wasted rest of the ingredients! We included it in omelets frequently, but spinach doesn’t keep well. No way we could use 6 bags/containers quickly enough.

I probably can’t either and it’s bad after I just talked to him about buying so much food that it gets wasted.

Oh, take that small bag of spinach and sauté onions in butter until translucent. Lots of butter. Then add a 3 1/2 oz. package of cream cheese and cook until creamy. Then add your spinach and cook until wilted. You can thin a little with 1/2 and 1/2 if you need to. My husband says you could add a smashed garlic clove. Salt and pepper as preferred. Fabulous.
