We’ve had dishes with feta in them so much lately, I think I’m starting to like it. Vince loves it! I told him if I learn to like feta, he has to learn to like cilantro and cumin but he said I’d still have to learn to like oregano and I don’t think that’s ever going to happen.
I’ve made so many recipes from The Mediterranean Dish website and have loved them all, including this one that I cooked tonight.
I also made her rice with vermicelli. I knew that 2 cups of raw rice would make a lot of rice but I cooked dry beans (anasazi) and Vince always likes rice with his beans. I also knew the shrimp recipe would make enough that we’d have leftovers and, since it’s shrimp, we’ll eat it again tomorrow. I hope that means more stitching time but I’ve kinda given up on having more stitching time.
We had a chopped salad too . . dinner has been served. The kitchen is clean . . you know what’s happening next — stitching!
