We’ll be having leftover turkey for several more days. Friday we had turkey soup and turkey sandwiches. Yesterday we had Thanksgiving leftovers – dressing, sweet potatoes, turkey, gravy, Watergate Salad. Today I knew it was time to disguise the turkey! I made these Turkey Croquettes and they were so good! They were very easy to make and cooked in the air fryer so that makes it even better. I halved the recipe and still got 10 croquettes.
I boiled the potatoes, mashed them in a large bowl, then added everything else that went into the croquettes, shaped them and stuck them in the fridge til almost time to cook them. Then I beat an egg, dipped them in the egg, then in Panko, then stuck them in the air fryer and, since they were a bit chilled, I cooked them for about 7 minutes on each side.
Vince cut back the asparagus bed today. When I planted the asparagus roots, I hadn’t expected them to grow so quickly so I stuck two little eggplants in there, not realizing they would turn into eggplant trees! He pulled the eggplants out and found about a dozen nice eggplants. They had been buried under the eggplant leaves and asparagus and had been protected from the freeze so we had fried eggplant and greenbeans with our Turkey Croquettes.
It was a great meal . . if I do say so myself! We have enough croquettes for another meal and I’ll definitely make these again.

On Thanksgiving night a big pregnant cat came up to the house and she looked hungry. She was still there in the morning so I told hubby to give her the turkey wings that were left over. I opened the fridge door and pointed to the bowl of turkey.
Later on I saw that bowl on the table, empty and washed! He had given ALL the leftover turkey to that cat! So no more turkey for us…?
