This is the point every year where I say “Next year, we’re having turkey sandwiches and potato chips!” How many of you say that?
Christmas is so easy, we usually have prime rib (but this year it will be chuck roast in the sous vide), baked potatoes, salad and rolls and something like brownies for dessert.
Thanksgiving is three or more days in the kitchen. I started on Monday making the cornbread, chopping the onions and celery for the cornbread dressing and making sure we had everything we needed for the meal. It’s been a little bit of cooking every day except today was a LOT of cooking.
Today I made a big breakfast so we would have leftover biscuits to add to the cornbread for the dressing. Then I made a pumpkin pie, which was the only pie I had planned to make til yesterday when Addie asked for a chocolate pie.
Then Addie reminded me that we were going to make a candle for her teacher for Christmas. Ughh! Right in the middle of my cooking.
Then, a friend showed the recipe for Spicy Jalapeno Cranberry Sauce and that sounded so good. I went out to the garden and rummaged around and found three jalapenos that were not ruined from the freeze and made that.
I am done for the night but probably too tired to do any stitching.
Tomorrow, I’ll get the dressing made, get the gravy made, get the sweet potato casserole made, season the turkeys and Vince will get one in the oil less fryer and Chad will fry one in his fryer. I bought rolls . . lazy Granny! 🙂

Judy here is how I do my Thanksgiving dinner so I am not in the kitchen for a week prior. I make my dressing up to the point of putting it in the oven. Then I freeze it and take it out the night before. Same with any of my casseroles. Also all of the chopping, I keep chopped onions in the freezer–I purchase 10 pounds from Sams and flash freeze them and keep them in the freezer and take out how many I will need for a recipe and toss them in frozen. Same with celery. I dice it and flash freeze it also, along with bell peppers, and even carrots. That way my prep is cut way down when I need those ingredients in cooking. I am a lazy cook. I will cook for the family, always have, but who wants to sit there to cut stuff up. Take an afternoon and do all of that–I have 2-3 gallon bags of onions, and at least a gallon of each of the other items. Dressing, I keep that on hand so we have it every month or so, I make multiple batches and freeze it, so when I don’t feel like cooking, I can take it out and throw it in the freezer. Sorry to be long winded.

Yes Thanksgiving takes a lot of time. This year, we also have two birthdays in the house, so I have been at cooking and baking for a while. After today, only one more birthday!

It was fun doing all the cooking but tiring and it was even more fun when Chad got here and stayed in the kitchen working with me. He loves to cook too.

I cheat on the rolls. I buy Sister Schubert and that way we can take out as many as we want or need.
