The recipe is Mediterranean Flatbread with Arugula and Smoked Salmon. Since our chat with the doctor on Tuesday, we’ve been wanting to have more veggie, less meat dishes but I also want to use up the leftovers in the fridge, as well as use what we have before buying more stuff. I had just received a grocery order from Walmart before we went to the doctor and discussed better ways of eating.
I had leftover smoked chicken in the fridge so I chopped it into chunks – not tiny chunks but not large chunks. I didn’t have arugula, though I almost bought some at Food 4 Less yesterday. I did have spinach.
Having not read the recipe completely, I kinda thought this was going to use a focaccia type bread but no . . it called for pizza crust. So last night I mixed up a batch of pizza dough.
I’ve been a Peter Reinhart fan for many years and I think I have all his books. I took one of his classes on Craftsy and his Napoletana Dough recipe is my go to recipe for pizza crust. Be aware that you need to mix it up and refrigerate it overnight. Last night, just before bed, I went into the kitchen to make sure everything was picked up and put away and that’s when I remembered that I needed to mix up the dough and leave it in the fridge overnight. Thank goodness it’s quick and easy to make.
I knew when I put the olive oil on this crust, sprinkled it with oregano and za’atar seasoning that Vince was going to be so happy . . and he was.
Next I spread homemade hummus on top, then the chopped chicken, then the spinach, then tomatoes and kalamata olives. The recipe calls for feta which I didn’t have and don’t like so we had goat cheese.
It wasn’t heated again after the crust was baked so all the veggies were raw. It was delicious.
I’m not sure what all do with the leftovers. I know if I heat it up, the spinach is going to release a lot of liquid and be runny. I’ll probably stick it in the air fryer and hope for the best. I used half of the pizza dough recipe and I can freeze the other half. This is something we’ll probably have often – so easy to make once the pizza dough is made.

Can you heat it in a skillet? The crust would be warm but the veggies on top should still be cool.

Looks delicious! I love the zaatar seasoning! Going to have to try this recipe!
