My menu plan is already messed up. That darned chicken has been in the fridge for 2-1/2 days and was still hard as a rock last night. No way it was getting smoked today so I took it out of the fridge, put it in a sink of cold water and hopefully by tonight, it will be defrosted enough that I can clean it up, season it and have it ready to smoke tomorrow. Everything else that was planned will be off by a day.
I told Vince . . we’re not having smoked chicken today. He said “We can go out and grab something!” Nope . . I took out a pound of ground beef, defrosted it in water and made Chopped Cheese Sandwiches.
I started to cook them outside but wanted to use the griddle and all I have to cook on outside that’s easy and upstairs is the round burner so I cooked these on the stove and tonight I’ll have to scrub all the grease splatters! I won’t do that inside again.
That’s the last picture I took. Chad, Nicole and Addie walked in about that time and I was busy finishing the food. I put cheese on top and it melted, then I scooped it up and put it on toasted ciabatta bread. I also fried tater tots.
That was dinner. As soon as the stove and pots cool down, I’ll go clean up the mess and then get back to cross stitching.

Judy, I always place strips of foil down over my exposed burners and it helps sooooo much with clean up. And the foil can be wiped at (lol) folded and used again. Actually I leave mine on the burners most of the time. My kitchen is NOT a show kitchen. I leave a lot out on the cabinets I use most of the time. Drives my grandson crazy. But they do not cook much so their kitchen always looks nice.

Judy, I made the sandwiches too, only I sautéed peppers with the onions and used extra sharp Tillamook cheddar cheese. They were delicious! Thanks for sharing the recipe!
