Last night there were two things I REALLY wanted to eat – smoked chicken and chuck roast in the sous vide. I think I started wanting smoked chicken when I started thinking about making the cranberry mustard. It probably sounds not so great but I LOVE (or as the floss tubers would say “love, love, love”) smoked chicken with just a tiny bit of BBQ sauce and then dip it in the cranberry mustard. Unfortunately for me, it’s going to take all of last night and most of today for the chicken to defrost in the fridge. This evening, I’ll rub it down with oil, season it up and then smoke it tomorrow.
The chuck roast in the sous vide takes about 30 hours to cook so, I took it out of the freezer last night, put it in the fridge to defrost. It should be thawed completely by this evening. I’ll season it up, vacuum seal it and get it going in the sous vide Saturday morning.
I should be able to smoke the chicken on Saturday, get the chuck roast going on Saturday and it will be done for Sunday.
But . . what am I going to fix today? According to my trusty list of “Food in the Freezer”, I had one meatloaf left so I found that and took it out to defrost.
Here’s my lazy cooking plan for the next few days:
Today: Meatloaf, Scalloped Potatoes, Corn
Saturday: Smoked Chicken, Potato Salad, Baked Beans
Sunday: Chuck Roast, Baked Sweet Potatoes, Steamed Broccoli
Monday: Meatloaf Sandwiches, Leftover Potato Salad, Leftover Baked Beans
Tuesday: BBQ Chicken Casserole,
Wednesday: Roastbeef Pasta Skillet, Green Beans, Salad
Thursday: Tomato Soup, Grilled Cheese Sandwiches

–I have found that I get good results with Sous vide starting with frozen meat. Especially with something you have to let sit for 8+ hours.

Some things I don’t mind starting from frozen but the chuck roast comes out a lot like prime rib so I usually start it from defrosted.
