The Green Tomato Salsa turned out so good. It helps that I love the ingredients. Vince doesn’t like cumin or cilantro so it isn’t going to be his favorite.

I don’t have the vinegar in that picture. The recipe called for sugar but I left it out. It wasn’t much and I figured . . why add it?

Seeing it and smelling it . . I knew it was going to be good. Once the jars were filled and there were just a couple of spoonfuls left, I took one out for Vince to taste. The first thing he said was “Cilantro!” Yes . . it is salsa! Then he said “And cumin!”

I ended up with 13 half pints and 3 pints.
I was hoping at least one jar didn’t seal but it looks like they all did. I’ll test them in the mornng before removing the rings. I want to pour some of this over a block of cream cheese and eat it with crackers or tortilla chip!
It will need to be rationed or I’ll eat it all within a month.

I bookmarked the recipe to try next year. I had a lot of green tomatoes when I took out the garden a couple of weeks ago but brought them in and stacked between newspapers. They all turned red faster than they had in the past and hopefully I will get a chance to make some yard sauce with them. I liked seeing that there wasn’t a lot of sugar in the recipe and as you mentioned you left it out since the amount was so low.
