Dinner was mostly completed before 9 a.m. That means . . stitching time!
Vince gets recipes in his in box. Isn’t it ironic that the Home Depot receipts come to my inbox and there’s not much there that interests me. There are plenty of things I could use but I have all I need to do what I do . . and the recipes come into Vince’s inbox and . . well, I don’t see Vince ever cooking anything.
He forwards the ones he would like me to make. Sometimes they look great and sometimes, I look at them and think . . if I made that, he would not like it.
The other day he sent me the recipe for Creamed Mushroom & Brie Chicken Breasts. I had everything to make that so I started it this morning.
We have white wine but I have no idea where it is so when Vince gets home, he can find the wine for me. I’ll finish it with the cream and brie, bake it and dinner will be done.
I have some ravioli with basil and I have some other flavor so I’ll cook those, serve this over the ravioli, make a salad and heat up some garlic bread and dinner will be ready!
By the way . . see all that chicken? That is two chicken breasts that I sliced up. I do not like to eat huge, thick chicken breasts. These were so big, I sliced them in half lengthwise, then sliced the thickness in half so I got four pieces of meat from each chicken breasts. There were six breasts in the package and I froze two packages – two breasts per package. With the cost of meat these days, this seems to help stretch the cost out over more meals. With this being 8 pieces of chicken, Vince will probably eat two of the larger pieces per meal and I’ll eat one of the smaller pieces so this will give us at least two meals and maybe even enough for a snack for Vince.

The chicken recipe sounds very tasty. I’m really glad we don’t eat as much meat these days as we used to. I cooked 2 ribeye steaks on Saturday night and we barely finished one between us. My husband had half of the other one for supper last night and just finished off the other half for lunch today. So I guess I don’t feel so guilty about spending that kind of money of beef. Plus it was so tender and good.

We don’t eat as much meat as we once did either but I think in general, we don’t eat as much of anything as we once did . . except maybe ice cream. 🙂

I have developed this aversion to chicken–the Cowboy has always had a dislike for chicken but will eat it if the chicken is “disguised.” But I just can’t handle a chicken breast any more so I buy frozen chicken tenderloins at Costco and use them in any chicken recipe I make plus I also use them for Emmi’s boiled chicken treats. I’m even starting to want my chicken to be very disguised!

There are a lot of ways I don’t like chicken but I still like it a lot shredded in soups and gumbo. I love chicken, rice and broccoli casserole. I love Raising Cane’s fried chicken strips and there’s one coming to Joplin soon. For the most part, I don’t like big hunks of it unless there’s a lot of sauce or gravy. I guess I really do like chicken.
