The first time I tasted goat cheese, I didn’t like it at all. I remember thinking it tasted like a dirty goat smelled. Somewhere along the way, I fell in love with goat cheese and can’t get enough of it.
When Vince and I were at Aldi the other day, they had eggnog goat cheese, and something like cinnamon bun goat cheese (can’t remember exactly). Those didn’t sound good to me but now I’m kinda wishing I had bought one of the eggnog goat cheese logs.
At first, we couldn’t find plain goat cheese but then we did. It’s the small logs – just enough for each of us to have three slices. I grabbed four bars and wish I had grabbed more.
I put the little log in the freezer for maybe half an hour, then peel the plastic off it, slice it into 6 medallions, dip them in an egg that has been whipped, add pepper to both sides, coat in panko and fry in hot butter with a little olive oil.
The cheese melts and the outside is crunchy and delicious! They’re fragile so plan on turning them once. I use a cast iron skillet and a thin edged metal spatula to flip them and try to get between the panko coating and the skillet. You can see that one of mine sustained an injury, which is easy to do but they are so good.
We had these yesterday and I woke up wanting them again for breakfast but . . didn’t do it . . not yet anyway.

It might be a bit addictive because at first, I didn’t even like to smell it and now, I really just can’t eat enough of it. I don’t know how or when I started loving it.
