This Lima Bean Okra Soup has been on my radar for several weeks. Vince cut the okra last night, I had fresh tomatoes, frozen corn and lima beans so today was the day to try this.
These are all veggies I love so I knew I would like it.
I wasn’t sure Vince would like it so I served it on the side with the leftovers steak strips and mashed potatoes from last night. He loved the soup!
There was not quite half a gallon left so I took out a chuck roast. I’m going to cook that tomorrow. We’ll eat it on Wednesday but I can take at least half the meat tomorrow and add to this soup, along with some of the beef broth from cooking the roast. That will give me at least enough vegetable beef soup to freeze two containers for future meals.
I will make this recipe again but I will add either ground beef that’s been browned or leftover roast beef. It’s plenty good but for a meal, I feel like it needs meat.

That’s why we had it as a side and Vince still had a plate of mashed potatoes, gravy and chicken fried steak. Just in case . .
