We’re trying to clean out freezers so lately I’ve been opening the freezer on Saturday or Sunday, grabbing two or three packs of meat, then planning our weekly menu around those. I try to only open the big freezers once a week, get what I need, put that in one of the fridge freezers til I need to defrost it.
One of the packages I grabbed yesterday was cube steak, which is not a favorite of mine. I don’t like frying – really don’t like frying. There were guys working around the driveway where I would use the hot plate to fry outside. The grill is out of commission til the deck is finished. So .. if I was going to fry them, I had to do it inside. Vince loves chicken fried steak so I decided just do it . . make chicken fried steak so I cut the steaks into strips, fried them, fixed mashed potatoes, gravy and green beans.
I have to admit, it was pretty good. There were a bit of leftovers and Vinces said “You’re saving this, right?” Leftover fried meat didn’t sound good to me but Vince said “Put the potatoes, meat and gravy all in the same container. I’ll eat it for dinner tomorrow night!” Sounds good to me!
I’ve been wanting to make okra, tomato and lima bean soup and I don’t think Vince would be thrilled with that. I can have soup and he can have the leftover meat and potatoes.

My mom used to make cube steak when I was a young. She would lightly flour it and fry it to brown it. Then she baked it layered in gravy, in a Pyrex dish until it was cooked through. Served with egg noodles, it brings back memories 🙂
