Vince knew I couldn’t or wouldn’t hold out forever. We’ve had soup from the Vietnamese restaurant, pizza and about everything else that can be picked up and brought home. Tile still isn’t finished. Electric plugs are still hanging out and I’m afraid to touch them. Stove is still pulled out away from the wall but at least it’s plugged in and working.
Earlier in the week I had wanted stuffed pepper soup and was determined I was not going to cook til the tiles were sealed, the electric outlets were back in place and had plates over them. But . . I was getting hungry for home cooked food. I figured in a big Dutch oven, browing the ground beef wouldn’t make too much of a mess so I made stuffed pepper soup.
The peppers were from the garden and the tomatoes were some I had canned a few weeks ago.
Look at that! Cast iron skillet simmering over a gas flame. I’ll never take that for granted.
The soup was delicious and easy to make. One pot had to be washed.
The best part. Half a gallon of soup left over!
